NUTELLA CHEESECAKE



Make 1 Cake
Preparation 20mins
Refrigerated at least 4 hours, no baking

Ingredients Switch to metric

  • 10 oz graham crackers
  • 5 tablespoons soft unsalted butter
  • 1 x 13 oz jar Nutella (at room temperature)
  • ¾ cup chopped toasted hazelnuts
  • 1 lb cream cheese (at room temperature)
  • ½ cup confectioners' sugar (sifted)  

Ingredients Switch to cup measures                                 

  • 250 grams digestive biscuits
  • 75 grams soft unsalted butter
  • 1 x 400 grams jar Nutella (at room temperature)
  • 100 grams chopped toasted hazelnuts
  • 500 grams cream cheese (at room temperature)
  • 60 grams icing sugar (sifted)
 
Method
  1. Break the digestives into the bowl of a processor, add the butter and a 15ml tablespoon of Nutella, and blitz until it starts to clump. Add 25g/3 tablespoons of the hazelnuts and continue to pulse until you have a damp, sandy mixture.
  2. Tip into a 23cm/9inch round springform and press into the base either using your hands or the back of a spoon. Place in the fridge to chill.
  3. Beat the cream cheese and icing sugar until smooth and then add the remaining Nutella to the cream cheese mixture, and continue beating until combined.
  4. Take the springform out of the fridge and carefully smooth the Nutella mixture over the base. Scatter the remaining chopped hazelnuts on top to cover and place the tin in the fridge for at least four hours or overnight. Serve straight from the fridge for best results.


Additional information - for vegetarians make sure the cream cheese does not contain rennet.

NUTELLA BANANA OAT MUFFINS

Ingredients
  • 2 cups flour
  • 1 cup old fashioned oats
  • ¼ cup white sugar
  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 bananas, mashed
  • Nutella
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine flour, oats, white sugar, brown sugar, baking powder, baking soda and salt. Stir until ingredients are well combined.
  3. In a large bowl, beat egg. Add milk, oil, vanilla and mashed bananas. Sir to mix ingredients until well combined.
  4. Add flour mixture to the banana mixture and stir until ingredients are incorporated, do no over stir.
  5. Line a 12 muffin pan with 12 muffin tins or spray muffin tin generously with cooking spray.
  6. Divide batter evenly among the 12 muffin tins.
  7. Add a teaspoon of Nutella to the top of each muffin and gently cut Nutella into batter with a knife or toothpick to produce pretty swirls.
  8. Bake at 375 degrees for 17-20 minutes or until toothpick comes out clean.
